
Pumpkin pastry
Ingredients for 4 people
1 kg pumpkin • 200 g sugar • 100 g butter • 4 eggs • 1 tbsp ground cinnamon • 1 lemon
Preparation
1. Cut the pumpkin in pieces, peel and remove seeds. Boil for 30 minutes. Strain in a colander and cover with a piece of cloth until cold.
2. Wash the lemon and grate half its rind (only the yellow part). Melt the butter and beat eggs. Pre-heat oven to 150º C.
3. Press the pumpkin in the cloth until all the water has been drained, place in a bowl and mix with the sugar, grated lemon and butter.
4. Add the cinnamon and eggs, mix and fill a low pan with this dough. Bake for one hour in the oven (adjust rack to lower position).
It is very important to strain the cooked pumpkin completely before mixing it with the rest of the ingredients. The oven tray or mould must be shallow.

You can serve this dish with fried potatoes and a fresh tomato salad. You can either fry the potatoes in deep oil or in a mixture of oil and lard; fry them with cloves of garlic and bay leaves.

“De re cibaria” says that the flour should be lightly toasted. To achieve this, toast it in a pan with no liquid, at medium heat and stirring all the time until it gets a light brown colour.
