Chicken in almond sauce
Ingredients for 4 people
1 kg pollastre trossejat • 100 g ametlles picades • 2 grans d’all • 25 g pa de pagès • 6 cullerades d’oli d’oliva • 1 pessic d’orenga seca • 1 pessic de pebre en pols • 4 dl aigua • farina • sal
1. Toast bread. Peel garlic cloves, remove core and crush with bread in mortar, mix with almond and dilute with water. Set aside.
2. Heat the oil in a casserole, salt and pepper chicken, roll in flour and fry until golden.
3. Add the almond paste and simmer for 30 minutes. Shake the casserole from time to time so the sauce thickens and does not stick at the bottom.
For chicken in almond sauce recipe we recommend cutting the chicken in 8 pieces. If you prefer you can buy whole almonds and crush them yourself in the mortar or use a blender with the toasted bread and garlic.
